Stuffed Mushrooms with Lemon-Pea Hummus
Ingredients
  • 12 large fresh mushrooms (1 ½ to 2 inches in diameter)
  • Nonstick cooking spray
  • 1 cup shelled fresh English peas (1 pound in pods)
  • 2 tablespoons olive oil
  • ½ teaspoon finely shredded lemon peel
  • 1 tablespoon lemon juice
  • 1 to 2 teaspoon snipped fresh mint
  • 1 tablespoon chopped fresh spring garlic*
  • Salt
  • Ground black pepper
  • 2 tablespoons grated Parmigiano-Reggiano or Grana Padana cheese
  • Fresh pea shoots and/or small fresh mint leaves (optional)
