West Indian Chicken Curry with Roti or Naan
Ingredients
  • 2 tsp. sea salt
  • 1 tsp. ground black pepper
  • 2 tsp. yellow or Dijon mustard
  • 1 onion, quartered
  • 1 onion, diced
  • 2 tomatos, quartered
  • 8 to 10 cloves of garlic
  • 1 jalapeno pepper, seeded
  • ⅓ cup fresh cilantro
  • 6 boneless chicken thighs, cut in half and trimmed of excess fat
  • 2 boneless chicken breasts, cut in about 4 to 5 pieces each
  • 3 tbsp. curry powder (try to find a variety from Trinidad)
  • 3 tbsp. canola or vegetable oil
  • 8 medium red, new or Yukon Gold potatoes, peeled and cut into chunks
  • 2 (14-oz) cans regular coconut milk.
