Spiced Pork Tenderloin and Brown Rice with Fruit and Pistachios

  • ¼ cup golden raisins
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • ½ teaspoon pepper
  • 2 (1-pound) pork tenderloins, trimmed
  • 5 tablespoons extra-virgin olive oil, divided
  • ½ teaspoon grated lemon zest plus 2 tablespoons juice
  • ½ cup shelled pistachios, toasted and chopped coarse
