  • 4 medium-sized yellow-fleshed potatoes, diced into ½-inch cubes
  • 1 large onion, diced
  • 2 large carrots, peeled and diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 6 cups beef broth
  • 1 cup pearl barley
  • 1 cup mushrooms, roughly chopped
  • ½ cup green beans, fresh or frozen
  • ½ cup frozen corn
  • 3 tablespoons tomato paste
  • 1 tablespoon dried rosemary
  • 1 tablespoon dried thyme
  • 1 bay leaf
  • Salt to taste
  • Pepper to taste
  • 2 teaspoons cornstarch, mixed with ¼ cup water
