Sweet & Sour Porcupine Meatballs
Ingredients
  • 1 lb. ground beef
  • ½ cup uncooked rice
  • ½ cup water
  • ¼ cup chopped onion
  • ½ tsp. salt
  • ⅛ tsp. garlic power
  • ⅛ tsp. pepper
  • ½ cup catchup
  • 1 T. cornstarch
  • ⅔ cup water
  • ¼ cup brown sugar
  • 1 tsp. apple cider vinegar
  • 1 tsp. dry mustard powder
  • 3 T. soy sauce
Steps
  1. Heat oven to 350 degrees. In a medium bowl, combine meat, rice, ½ cup water, onion, salt, garlic powder, and pepper.  Shape mixture by rounded tablespoonfuls into balls.  Place meatballs into increased 8x8x2 baking dish.
  2. Whisk together the ketchup, cornstarch, water, sugar, vinegar, dry mustard salt, ad soy sauce in a bowl until the sugar is dissolved and the cornstarch is smooth.
  3. Pour the sauce over meatballs.  Bake 45 minutes covered.  Uncover and bake additional 15 minutes.
