Kim’s Salmon Patties

Ingredients
  • Three 6-oz cans boneless, skinless salmon, drained or equivalent fresh cooked salmon
  • ½ cup finely crushed pork rinds
  • ⅓ cup sliced green onion
  • 1 to 2 tablespoons lemon or lime juice
  • 3 minced garlic cloves
  • 2 large eggs, beaten
  • ¼ cup mayonnaise
  • 1 tablespoon Ranch seasoning mix, sugar free (Gwen’s Nest recipe) or Greek Freak
  • 1 tsp Cajun seasoning (Black Magic)
  • Coconut oil
Steps
  1. In a large bowl, add the salmon through mayonnaise and stir.
  2. Split the salmon mix in half, and move half to another bowl.
  3. Add the Ranch seasoning to one bowl and the Cajun to the second bowl. Stir to mix in seasoning.
  4. Form 4 patties of each flavor for full size, 6 patties for slider size.
  5. In a skillet, melt coconut oil over medium high heat. Brown patties on each side, turning carefully to avoid breaking apart.
  6. Serve with homemade Ranch Dressing (see note.)
Notes
  • Ranch seasoning mix: gwens-nest.com/ranch-dressing-mix/
  • Ranch Dressing:
  • 8 oz full fat sour cream or FF Greek yogurt for lighter dressing
  • ¼ cup heavy cream
  • ¼ cup mayonnaise
  • Two or three tablespoons Gwen’s Nest Ranch seasoning
  • Mix with a whisk in a small bowl. Keeps about a week in the refrigerator.
