Awesome Make-Ahead Waffle Fries #1
Based on several sources and converted to an air fryer technique.
Ingredients
  • subheading: Prep:
  • 6 cups water (1500g) -- start water heating to boil
  • 3 medium (2 large) russet potatoes (peeled & waffle sliced)
  •  
  • subheading: Par Boil:
  • note: Add to boiling water
  • 1½ tbsp diamond crystal salt (15g)
  • 1½ tbsp vinegar (23g)
  • note: Add potatoes and par boil for 6 to 8 min
  •  
  • subheading: Drain, Cool & Dry:
  • note: Drain into a colander
  • note: On a paper towel lined cutting board, lay out potatoes in a single later
  • note: Let cool & dry for 10 min
  •  
  • subheading: Flash Fry :
  • note: use the air fryer basket WITHOUT the crisper plate
  • note: spray the basket with oil
  • note: dump in the potatoes and spray with oil
  • note: toss to two spatulas to evenly coat with oil
  • note: air fry @ 400° for 4 min
  • note: toss with spatulas, spay with oil;
  • note: air fry @ 400° for 4 min

  • subheading: Freeze:
  • note: lay out potatoes in single layer, on parchment paper
  • note: freeze for at least 2 hours
  • note: move to freezer bag and store up to 3 months
  •  
  • subheading: Final Cook:
  • note: use the air fryer basket WITHOUT the crisper plate
  • note: spray with oil; add fries; spray w/oil
  • note: air fry @400 for 5 min
  • note: spray with oil; toss/flip; spray w/oil
  • note: air fry @400 for 5 min
  • note: if needed, repeat flip+fry for additional 2 min intervals
