Tataki of Tuna with Ponzu sauce

Ingredients
  • 1.5 kilos of tuna
  • 1 cup black and white sesame seeds
  • 1 tbsp black pepper
  • Canola oil.   salt
  •  
  • Sauce
  • ½ cup Japanese soy sauce
  • 1 lemon juiced
  • 2 tbsp yuzu
  • 1 tsp grated ginger
Steps
  1. 1. cut the tuna into long rectangles, anout 2 inches thick
  2. 2. Lightly salt, and roll in sesame seeds and pepper
  3. 3. Heat skillet... add oil when hot, then add tuna, one minute on each side.
  4. 4. Place cooked tune in fridge.
  5. 5. Mix all the ingredients for the sauce.
  6. 6. Slice the tuna finely and drizzle with the sauce,,,
  7. 7. Add a touch of sesame oil for garnish
