Ingredients
  • ¾ cup quinoa (dry)
  • 1 ½ cups water or broth
  • 1 tablespoon olive oil, divided
  • 1 pound chicken breast, diced into 1-inch pieces
  • 1 ½ tablespoons taco seasoning (divided)
  • 1 cup diced onion (120 grams)
  • 3 cups diced bell pepper (360 grams)
  • 1 15.5-ounce can black beans, drained and rinsed (1.5 cups/240 grams)
  • ⅓ cup salsa
  • ½ heaping cup shredded cheddar cheese (1.5 ounces)
  • salt and pepper, to taste
  • toppings - avocado, cilantro, salsa, sour cream/yogurt…
