  1. So, I did a thing. I took the yellow cake recipe that has been going around, doubled it, baked in a 9x13 pan. When done, I let it cool for about 30 minutes, poked holes in it with the handle of my wooden spoon, and poured simply delish gelatin (2 boxes dissolved in a cup of cold water and add a cup and a half of boiling water), topped with chopped strawberries, and refrigerated until totally cool. Then I topped it with homemade whipped cream that I sweetened with some powdered erythritol and flavored with vanilla. I stabilized the whipped cream with plain gelatin. Voila! Strawberry Shortcake Poke Cake. Totally on plan, totally delicious, and totally hubby approved.
