  • 1 (28-oz.) can crushed San Marzano tomatoes
  • 4 cups unsalted chicken stock
  • Rind from 1 (8-oz.) Parmigiano-Reggiano cheese wedge
  • 1 (20-oz.) pkg. frozen cheese ravioli
  • 1 ¾ tsp. kosher salt, divided
  • 5 oz.s fresh baby spinach
  • ⅓ cup heavy whipping cream
  • 2 tsp.s red wine vinegar
  • ¼ cup torn fresh basil
  • Grated Parmigiano-Reggiano cheese
