Scones with Gruyere and Country Ham
Ingredients

  • 8 ¼ ounces (250 grams) Gruyère cheese
  • 5 ¼ ounces (150 grams) country ham
  • 3 ½ cups (440 grams) all-purpose flour
  • ¼ cup (30 grams) whole-wheat flour
  • Scant ¼ cup (40 grams) granulated sugar
  • 4 teaspoons (16 grams) baking powder
  • 1 teaspoon baking soda
  • ¾ teaspoon fine salt
  • 18 tablespoons (2 sticks plus 2 tablespoons/255 grams) cold unsalted butter, cut into ½-inch cubes (see Notes)
  • 1 ¼ cups (300 grams) cold, well-shaken buttermilk, preferably full-fat
  • ½ cup (55 grams) finely chopped scallions (4 to 6 scallions)
  • 1 large egg
  • ½ tablespoon heavy cream
  • Sesame seeds, for sprinkling
  • Flaky sea salt, such as Maldon, for sprinkling
