Colcannon (mashed potatoes and cabbage)
Ingredients

  • 4c Potatoes
  • 4c Cabbage
  • 1 to 2T Dijon Mustard
  • Almond milk
  • 1 bunch green onions
  •  
  • Peel and boil the potatoes. Drain and set aside.
  • Steam the cabbage. Drain and set aside
  • Add mustard and almond milk to the potatoes and mash.
  • Add the steamed cabbage and green onions. Mix well.
  •  
  • It always seems like I have too much cabbage, but it disappears as you mix it in.
  •  
  • The next morning, I added a little more almond milk and formed patties. I “fried” the patties in a dry skillet for 5 to 7 min per side on low-med heat.
