Ingredients
  • One pot meal hack: about once per week I make salmon in my IP. I loosely follow the recipe in Bob Warden's book "Great Food Fast." I have always cooked my rice separately, up until yesterday. Yesterday I bought one of those Near East Rice Pilaf mixes, poured it into the bottom of my IP, added 1 ¾ cup of water and some butter. Then I put the steamer rack over the rice and cooked the salmon on top of the steamer rack, lightly seasoning the salmon. In six minutes of cooking time I had beautiful salmon and great rice pilaf done at the same time in one pot! Credit to the "Health Starts in the Kitchen" blog for the inspiration from one of their salmon recipes!
