Battered French Toast

I am a feisty old Pa. Dutch lady who is enjoying retirement. I have 3 Grandchildren who keep me young; I think. I am also an avid reader & graphic designer. One of my greatest joys is a 10-year-old Grandson who loves to garden with Grandma. He plants Zucchini, harvests it, & even makes the Zucchini Bread.

1 cup all-purpose flour

2 teaspoons baking powder

2 teaspoons white sugar or brown sugar

1 teaspoon ground cinnamon

1 cup milk

2 eggs

1 Tablespoon butter, melted (plus additional solid butter for pan frying)

1 teaspoon vanilla extract

10 to 12 slices of thick sliced hearty bread (about ¾ inch thick)

Vegetable shortening or vegetable oil for frying
