Ingredients
- 2 kg chicken thigh, bone in, skin off
- 300 g aged basmati rice
- 50 ml milk
- 100 ml vegetable oil
- Pinch saffron threads
- 225 g butter
- 2 bay leaves
- 2 star anise
- Salt, to taste
- subheading: Marinade:
- 200 ml vegetable oil
- 2 onions, thinly sliced
- 3 star anise
- 3 cloves
- 7 green cardamom pods
- 6 dried Kashmiri chillies
- 30 g coriander seeds
- 30 g cumin seeds
- 20 g black peppercorns
- 1 cinnamon stick
- 5 bay leaves
- 300 g Greek yoghurt
- 80 g ginger garlic paste
- 1 long green chilli, seeded and finely chopped
- 50 ml lemon juice
- ½ tsp ground nutmeg
- ½ tsp turmeric powder
- 50 g Kashmiri chilli powder
- 5 g chilli powder
- 1 bunch mint, leaves picked and roughly chopped, some leaves reserved to serve
- 1 bunch coriander, sprigs picked and roughly chopped
- Lemon wedges, to serve
- Marinating time: overnight
