Ingredients
  • 2.75 lb. chicken. I used a Halal chicken from Valle's
  • 3 Tablespoons olive oil or more, if needed
  •  
  • subheading: Chicken Rub:
  • 3 T. salt
  • 3 T. garlic powder
  • 3 T. onion powder
  • 3 T. black pepper, I use way less
  • 3 T. tried thyme
  • 3 T. smoked paprika
  • 1 T. dried rosemary, optional
Steps
  1. subheading: Make the rub:
  2. Mix all ingredients together.  Notice the ratio of ingredients are 1:1 so you can make as much rub as you want.  The 3:3 ratio I used was enough to cover my chicken and then have some left over for the next time.
  3. subheading: Tie the chicken up:
  4. Tie drum sticks together.  Tie wings together. Tie string around the middle of the chicken
  5. Put on spit.
  6. Coat chicken with olive oil.
  7. Rub the chicken rub all over the chicken.  Try to get some of the rub down the inside of the chicken also.
  8. Use the air fry rotisserie setting at 360 degrees.  Check after 1 hour.  It may take as long as 1 hour and 30 minutes.
  9. The thigh meat should register 165 degrees.  Take into account the residual cooking that will occur when the chicken is removed from the oven.
