French Onion Shepherd's Pie with Lentils
Super comforting, hearty enough to serve as a plant-based main, make ahead-friendly, and just so flavourful from all of the caramelized onions. We top it with a creamy and satisfying cauliflower potato mash for a little extra vegetable goodness.
  • subheading: French Onion & Lentil Filling:
  • 2 tbsp olive oil, plus extra
  • 3 lbs yellow onions
  • salt and black pepper
  • 1 tbsp thyme leaves
  • 1 bay leaf
  • ½ tsp (1 clove) minced garlic
  • 1  tbsp tomato paste
  • 1½ cups French lentils, rinsed
  • 1½ tbsps sherry or balsamic vinegar
  • 1½ tbsps tamari soy sauce
  • 5 cups vegetable stock
  • subheading: Cauliflower Potato Mash:
  • 1 tsp (2 cloves) smashed garlic
  • 1½ lbs Yukon gold potatoes
  • 4 cups cauliflower florets (from ½ large head)
  • 4 tbsp butter
  • ½ cup milk
  • 1 tbsp nutritional yeast
  • salt and black pepper
