Vietnamese Chicken and Lemongrass Meatloaf with Spicy Glaze
Ingredients
  • 2 slices (about 90g) good-quality white bread
  • 120ml milk
  • 2 tbsp oil
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1-inch knob ginger, minced
  • 2 stalks lemongrass (white part only), minced
  • 1 red chilli, minced
  • ½ cup fresh coriander stalks and leaves, roughly chopped
  • 1 tbsp fish sauce
  • 1 tbsp dark soy sauce
  • 2 eggs, lightly beaten
  • 2 tsp castor sugar
  • ½ tsp salt
  • ½ tsp white pepper powder
  • 1kg minced chicken
  • baguettes, mint, coriander, Thai basil, lettuce, cucumber, to serve
  • subheading: For the glaze:
  • 2 tbsp sriracha chilli sauce
  • 2 tbsp fish sauce
  • 1 tbsp lime juice
  • 1½ tbsp light brown sugar
  • 1 tbsp light soy sauce
