Mediterranean Pasta Salad
Ingredients
  • 14oz - 400g wholegrain farfalle pasta (best shape for holding dressing)
  • ½ cup sundried tomatoes, chopped
  • 1 cup Kalamata olives, halved
  • 1 cup cherry tomatoes, halved (11oz- 300g)
  • 1 small red onion, thinly sliced
  • 1 large cucumber, peeled, seeds removed, diced or sliced
  • ½ cup crumbled feta cheese (keep some for garnish)
  • 2 cups fresh basil leaves (torn)
  • ½ cup fresh parsley, chopped
  • 1 avocado, diced (for creaminess)
  • ¼ cup pine nuts, lightly toasted
  • subheading: Dressing:
  • 7 tbsp extra virgin olive oil
  • 4 tbsp cider vinegar or white wine vinegar
  • 1 lemon juiced and zested
  • 1 tsp dried oregano
  • 3 cloves garlic, minced
  • 2 tsp Dijon mustard
  • Salt and pepper to taste
