Caribbean Plantain Rice

Ingredients
  • 3 green plantains
  • 1 tbsp olive oil
  • ⅓ onion, diced
  • 3 garlic
  • 1 lime
  • 2 tsp oregano
  • 1 cup bone broth
  • ⅓ cup cilantro
  • salt
Steps
  1. Peel and chop plantains, then pulse in a food processor until finely chopped.
  2. Heat oil in a large skillet, add onions and garlic and saute for 3 to 4 minutes
  3. Stir in plantains, lime zest, oregano and ½ cup of broth and cook until plantains soften.
  4. Add remaining  broth and cook until broth has evaporated
  5. Stir in cilantro, lime juice and salt.
