Stew, Summer Chickpea
Ingredients
  • 1 Tablespoon butter
  • ½ Tablespoon extra virgin olive oil
  • 1 medium carrot, thinly sliced (½ cup)
  • ½ stalk celery, thinly sliced (¼ cup)
  • ¼ onion or ½ large shallot, chopped
  • homemade seasoned salt and pepper (see notes)
  • 1½ cloves garlic, pressed or minced
  • 1½ cups chicken stock
  • ½ 15oz can Red Gold® Petite Diced Tomatoes
  • ½ cup Red Gold® Tomato Sauce
  • 1 15oz can chickpeas, drained and rinsed
  • 1 teaspoon Italian seasoning
  • 1½ cups baby spinach, chopped
  • 1 ear fresh sweet corn, kernels cut from cob (~1-½ cups)
