Potato-Leek Au Gratin (Whole30 Paleo Approved)
Ingredients
  • 3 lbs. large yellow potato
  • ½ large yellow onion, sliced very thinly
  • 2 leeks, white and light green parts, cleaned of all sand and sliced thinly
  • 2 cloves garlic, minced
  • 2 tbsp. olive oil
  • 1 tbsp. ghee
  • cooking spray
  • subheading: FOR THE SAUCE:
  • 2 tbsp. ghee
  • 2 cloves garlic, minced
  • 1 cup full fat canned, unsweetened coconut milk (be sure to blend it so that it is not separated)
  • 1 cup chicken broth
  • 1 tbsp. arrowroot starch
  • salt and pepper
  • 4 sprigs fresh thyme, leaves removed
  • aluminum foil
