Pancakes
Ingredients
  • 2.5 cups of all purpose flour (make sure not to pack flour in. Use spoon to scoop into measuring cup)
  • 2 TBSP baking powder
  • 2 TBSP sugar
  • 1 tsp salt
  •  
  • 2 cups milk
  • 2 egg whites, whip till soft peaks form
  • 2 egg yolks
  • 4 TBSP melted butter
  • 1 to 2 drops of pandan extract (or 1 tsp vanilla extract)

  • 1 cup blueberries (more to garnish)
  • ½ cup chocolate chips (optional)
  •  
Steps
  1. Sift flour with baking powder
  2. Add sugar and salt and mix
  3. Stir all wet ingredients together except egg whites
  4. Add wet ingredients to dry ingredients
  5. Fold in chocolate chips and blueberries
  6. Gently fold in egg whites
  7. Cook on medium low heat till bubbly on top, flip
  8. Garnish with more blueberries, chocolate chips, and hot maple syrup
