One Pot Vegetable Pasta
Ingredients
  • 1 lb. spaghetti or linguini
  • 4 ⅓ cups water
  • 10 oz. mushrooms, sliced
  • 3 cups spinach leaves
  • 1 cup frozen peas
  • 2 cloves garlic, thinly sliced
  • ¼ tsp. red pepper flakes
  • 1 tsp. dried italian seasoning
  • salt/freshly ground pepper
  • ½ cup heavy cream, cashew cream, or milk
  • ½ cup parmesan cheese, vegan or regular
