Healthy Taco chicken over Brown rice
Healthy Taco chicken and brown rice meal that can be under 400 calories per serving

Ingredients
  • 1½ pounds boneless skinless chicken breasts cubed
  • 2 medium green bell peppers chopped
  • 1 medium yellow sweet onion, chopped
  • 2 medium tomatoes, chopped
  • 1 15oz can pinto beans, drained and rinsed
  • 2 packets of low sodium taco seasoning
  • 2 cups brown rice uncooked, plus water called for
  • 1 cup water for the Instant Pot
  • Salsa and cheese for toppings
Steps
  1. Layer water, chicken, peppers, onions, tomatoes, beans, and seasoning in this order without stirring in the inner liner of your instant pot.
  2. Place lid on pot, set to sealing.
  3. On pressure cook or manual, set pot to 20 minutes.
  4. While the pot is cooking, prepare your brown rice.
  5. When complete cooking, allow your pot to npr for 10 minutes.
  6. After all done, dish and serve. Add low fat cheese, salsa,or sour cream
Notes
  • If you abide by servings (4 ounce chicken, ½ cup rice, and etc.) Limit cheese, this meal can be under 400 calories.
