Garlic Butter Shrimp Pasta (Dairy Free Options)
Ingredients
  • 18 ounces pasta - see notes, you can also use ½ pound or 8 ounces
  • 12 tablespoons salted butter - olive oil, or vegan butter
  • 4 cloves garlic - minced
  • 1 teaspoon red pepper flakes
  • 1 teaspoon Italian seasoning
  • 2 tablespoon lemon zest - from 1 lemon
  • 4 cups roughly chopped baby spinach
  • 2 tablespoon chopped fresh parsley - or basil
  • 2 pound peeled shrimp - thawed and drained if frozen
  • 4 tablespoons freshly squeezed lemon juice
  • 1 teaspoon sea salt - more or less to taste
  • 4 cups reserved pasta cooking water
  • Optional: grated parmesan cheese to sprinkle on top
