We are trying to follow a Mediterranean diet. I'm vegan, he's not, but our household is dairy & egg-free due to allergies. On his meatless days we both eat it "Renee's way".

Ingredients
  • 2 cups (1 lb) dried pinto beans, sorted and rinsed
  • 5 cups water
  • 2 tsps Better than Bouillon base
  • 4 cloves garlic
  • ¾ tsp salt, plus more
  • ¾ tsp ground coriander
  • ¾ tsp ground cumin
  • ¾ tsp garlic powder
  • ¾ tsp onion powder
  • ¼ to ½ tsp cayenne pepper
  • 1 small white onion, chopped
  • 1 medium tomato, chopped
  • ½ cup chopped cilantro
  •  
  • subheading: For Greg's:
  • 3 oz smoked chicken breast
  •  
  • subheading: For Renee's:
  • ½ avocado OR
  • 2 tsps EVOO.
  •  
  • Lime to finish both.
Steps
  1. Add the water, beans, garlic, Better than Bouillon, garlic and salt to the Instant Pot. Set the pressure to high and let cook for 30 minutes. Then turn off the pot and let sit for 10 minutes longer. Release pressure at this time and remove lid.
  2. Turn the pot on medium saute and add spices and cook for about 10 minutes stirring occasionally.
  3. Scoop some out at this point and add to a small pot on the stove top with the chicken. Let it come to a boil and then turn to low, cover and simmer for 30 minutes.
  4. For the remainder in the instant pot, if you have the slow cooker mode, change the setting to low slow cook and let it go for another 30 minutes. If you don't have the setting, turn the saute to low and stir occasionally.
  5. Once the 30 minutes is up add the tomatoes, cilantro and onion to each pot and cook for 5 minutes longer and then serve with additional tomatoes, cilantro and onion.
  6. Serve mine with EITHER finishing EVOO or avocado.
  7. Serve Greg's with a Chapati or whole wheat bread.
Notes
  • Note to self: Try to reduce salt and Better than Bouillon further. Perhaps use your old chicken spice blend recipe.
  • The oil isn't added in the beginning to fry the onions as we love them only mildly cooked in the final 5 minutes with the tomato and cilantro. If you want to fry some onion and then cook the beans in it, make sure to still add some more in the final 5 minutes. Another awesome thing to do is take a little of the spice blend and fry some onions and oil with them and add them to the top of each bowl before serving.
