Crispy Cheddar Chicken
Ingredients
  • 2 Tablespoons of butter
  • ½ cup of Panko Breadcrumbs
  • 1 Tablespoon of paprika
  • 1 Tablespoon of garlic powder
  • 2 teaspoons of onion powder
  • 1 cup of shredded cheddar cheese
  • 4 chicken breasts
  • 2 Tablespoons of mayonnaise
Steps
  1. Preheat oven to 425°
  2. Prepare baking sheet by lightly oiling the pan
  3. Place butter in a medium sized microwave safe bowl; microwave until melted
  4. Stir the Panko, and half of the paprika, half of the garlic powder and half of the onion powder and half of the cheddar cheese in with the butter. Salt and pepper to taste.
  5. Pat chicken fry with paper towels and season with remaining paprika, garlic powder, onion powder and cheddar cheese.
  6. Evenly spread a thin layer of mayonnaise onto tops of chicken and mound with Panko mixture (pressing to adhere) - no need to coat the underside.
  7. Cook chicken in oven for 20 to 30 minutes until done.
