Pressure Cooker Chicken Risotto
Ingredients
  • 2 tablespoons olive oil
  • 600g chicken thigh fillets, trimmed, cut into 3cm pieces

  • ½ cup dry white wine
  • 3¼ cups Massel chicken style liquid stock
  • ¾ cup grated parmesan, plus extra to serve
  • 30g butter, diced
  • 75g baby spinach
