breakfast enchiladas! {perfect for "breakfast for dinner"}
Ingredients
  • 1 lb breakfast sausage
  •  
  • 1 medium red pepper, chopped
  •  
  • 1 small onion, chopped
  •  
  • ½ cups green onions, chopped
  •  
  • 2-½ cups shredded sharp cheddar (or preferred cheese)
  •  
  • 10 whole tortillas
  •  
  • 2 cups Half-and-half
  •  
  • 6 eggs
  •  
  • 1 Tbl flour
Steps
  1. In a large pan, cook the sausage, peppers and onions together until the sausage is done. Drain if needed.  Combine this mixture with green onions and two cups of cheese.  Add ⅓ cup of this mixture to each tortilla and roll up and place seam side down in a 9 x 13 inch baking dish.  Repeat for all.
  2. Whisk together half-and-half, eggs and flour. Pour over filled tortillas. Cover and let sit overnight.
  3. When ready to cook preheat oven to 350ºF.
  4. Bake, covered, for 30 to 40 minutes, or until eggs are set. Uncover, sprinkle with remaining cheese and bake for ten more minutes or until cheese is melted.
