Braised Brisket and Onions
Ingredients
  • Extra virgin olive oil, such as Colavita
  • 3 large Spanish onions, thinly sliced
  • ¼ cup tomato paste
  • Kosher salt
  • Freshly ground black pepper

  • 3 cups beef broth
  • 1 cup dry red wine
  • Bouquet garni: several thyme sprigs, parsley stems, bay leaves tied to celery rib
