Healthy Chocolate Hummus with Homemade Instant Pot Chickpeas
Ingredients
  • subheading: For the dried garbanzo beans (see note if using canned garbanzo beans):
  • 1 pound dried chickpeas (aka garbanzo beans), rinsed and sorted
  • 6 to 8 cups water (enough to cover the beans by about 2 inches)
  • ½ teaspoon kosher salt
  • subheading: For Chocolate Hummus:
  • 1 ½ cups cooked garbanzo beans (or 1 15-ounce can low sodium chickpeas/garbanzo beans, rinsed and drained)
  • ¼ cup tahini
  • ¼ to ⅓ cup maple syrup (depending on how sweet you want it)
  • ¼ cup cocoa powder
  • 2 teaspoons vanilla extract
  • ½ teaspoon kosher salt
  • 3 tablespoons hot water
  • 2 to 3 tablespoons mini chocolate chips
