Chickpea Cabbage One-Pan
One-pan recipes are simple, and quick to prepare and this is not an exception. Great for every person with a tight schedule. I love to prepare it ahead of time for a few days.

Rich in fiber, iron, vit. K, B1, B2, B3 and with ample protein.

  • 240g Chickpeas, cooked
  • 150g Tomato
  • 70g Pepper, hot
  • 100g Red cabbage
  • ½ Onion
  • 20g Peanut butter
  • 1Tbsp Nutritional yeast
  • 1Tbsp Dijon Mustard
  • Bunch of parsley to garnish
  1. Throw all ingredients together on a pan and cook covered on medium-low heat for about 10 minutes.
