Carrot Cake (Sylvie’s)
Ingredients
  • subheading: Cake:
  • 1 cup olive oil
  • 2 cups white sugar
  • 4 eggs
  • 2 cups of flour
  • 2 tsp cinnamon
  • 2 tsp baking powder
  • 2 tsp baking soda
  • ½ tsp salt
  • 1 cup pineapple (crushed)
  • 2 cups grated carrots
  • ½ cup of nuts (optional)
  •  
  • subheading: Icing:
  • 1 pkg cream cheese
  • 3 cups icing sugar
  • 2 tbsp butter
  • 1 tsp vanilla
Steps
  1. Mix oil and sugar well than add 1 egg at a time.
  2. Mix all ingredients together
  3. Cook at 350F for approximately 45 min to 1hour (I usually put a toothpick in the middle to check). At home 45 min in my PC baking dish.
  4. Let cool then ice.
  5. Makes a 9 x12 pan
