Servings: Makes 80ml popsicles
Ingredients
  • 45 grams cashews
  • 30 grams dates, chopped
  • 1 ½ cup soy milk (maximum)
  • ½ cup banana, mashed
  • ½ teaspoon vanilla essence
  • 1 ½ tablespoons cacao powder
Steps
  1. Soak cashews in boiling water for 10 to 15 minutes.
  2. Chop the dates into small pieces and place in a jug.
  3. Pour just enough boiling water over the dates to cover them and soak until soft (5 to 15 minutes)
  4. Strain the dates over a jug to reserve the juice.
  5. Add the dates to the blender.
  6. Add enough soy milk to the date juice to make 1 ½ cups of liquid and add to the blender.
  7. Mash enough banana, with a fork, to fill a ½ cup measure and add to the blender.
  8. Drain the cashews, discarding the liquid, and add to the blender.
  9. Add the vanilla and the cacao powder.
  10. Blend until smooth and pour into Popsicle molds.
  11. Freeze for a minimum of eight hours.

  • I use Vitasoy Protein Plus Soy Milk.
