100% Sorghum Sourdough Bread (Gluten-Free)
Ingredients

  • 70 grams active gluten-free sourdough starter, I used my brown rice starter
  • 70 grams sorghum flour, not millet or amaranth
  • 70 grams water, warm, not hot
  • subheading: For the dough:
  • 20 grams whole psyllium husk, not powder
  • 350 grams water, warm, not hot
  • 15 grams sugar, honey or maple syrup can be used
  • 12 grams apple cider vinegar, any other edible vinegar can be used
  • 200 grams sorghum flour
  • 12 grams salt
  • subheading: For topping:
  • sesame seeds or linseeds, optional
