Spinach, Fetta and Broad Bean Pie
Ingredients
  • 2 cups wholemeal plain flour
  • 1 cup wheatgerm
  • 160g butter, chilled, chopped
  • 4 eggs
  • 2 tablespoons chilled water
  • 2 teaspoons olive oil
  • 1 large brown onion, finely chopped
  • 2 garlic cloves, crushed
  • 200g baby spinach
  • 2 cups (300g) fresh broad beans (see note)
  • 100g feta, crumbled
  • 2 tablespoons finely grated vegetarian hard cheese or parmesan
  • 1 tablespoon chopped fresh dill
  • 1 teaspoon finely grated lemon rind
  • ⅓ cup milk
