Vegan Goat Cheese
Vegan Fermented Cheese
Ingredients
  • CRUSTING
  • 2 tblsp fresh thyme (set aside few thyme leaves)
  • 1½ tblsp pumpkin seeds
  • 2 tblsp pistachios
  • 1 tblsp dried cranberries
  • Pinch hickory smoked salt
  • Pinch black pepper & salt (to taste)
  • CHEESE
  • 2 cups soaked skinless almonds (soak for 2 days & changed water daily
  • 1 clove garlic
  • 1¼ tsp salt (pink or grey)
  • ¼ cup Rejuvelac (liquid sprouted grain liquid)
  • 1 tsp dark Amber maple syrup
  • 1 lime juiced
Steps
  1. CRUSTING
  2. Add all ingredients to bullet/blender & add larger chopped pieces of fresh thyme & set aside in fridge
  3. CHEESE
  4. Add all ingredients & blend till smooth & creamy but not to liquid
  5. Set aside in basin & lightly cover with cling file & set on counter for 2 days
  6. Cover tighter with cling film & refrigerate
  7. Spoon cheese into cling film & mould into log & place on cling film with Crusting mix & roll
