Korean Sloppy Joes with Sweet and Spicy Cucumbers

  • ⅓ cup hoisin sauce, gluten-free if needed
  • 2 tablespoons fresh lime juice
  • 5 buns
  • subheading: SWEET AND SPICY CUCUMBERS:
  • ½ pound cucumbers, Persian or Kirby, sliced ¼ to ½ inch thick
  • ¾ teaspoon kosher salt
  • 1 teaspoon gochugang
  • 1 teaspoon sugar
  • ½ teaspoon rice vinegar
  • ¼ teaspoon sesame oil
