Pressure Cooker Corn Chowder with Potatoes and Bacon
Ingredients
  • 2 cups fresh or frozen corn kernels 400g
  • 2 tbsp oil, or bacon grease
  • ¼ pound bacon, diced 113g
  • 1 cup onion, diced
  • 2 tbsp cornstarch
  • ½ green pepper, chopped
  • salt and black pepper
  • 1 tbsp minced garlic
  • 1 ½ cups shredded carrot 75g
  • 4 cups gluten free chicken broth
  • 4 cups yukon gold potatoes, peeled and diced 700g (approx)
  • ½ tsp thyme
  • 1 cup coconut milk or half and half
