Beef and Guinness Stew
Ingredients
  • 3 thick slices bacon (diced)
  • 2 pounds lean stew beef, round or lean chuck (cut in 1-inch cubes) ¼ cup all-purpose flour
  • ½ teaspoon salt

  • 2 large onions (chopped, about 2 to 3 cups)
  • 1 clove garlic (minced)
  • 2 to 3 cups carrots (diced or sliced)
  • 1 ½ cups Guinness stout
  • 1 cup beef broth
  • 2 tablespoons tomato paste
  • 2 teaspoons Worcestershire sauce
  • 1 bay leaf
  • ½ teaspoon dried leaf thyme
  • 2 to 3 cups diced potatoes
  • 2 tablespoons fresh parsley (chopped)
