Riso Verde (Risotto Verde)
Ingredients
  • 400 g (2 cups) arborio rice
  • 2 shallots finely minced
  • 5 to 6 green onions, thinly sliced
  • 1 bunch flat-leaved parsley, finely chopped
  • ¼ cup white wine
  • 200 g (12 oz) frozen spinach, chopped
  • 850 ml (3 ½ cups) chicken broth (more if needed)
  • 100 g (3 oz) freshly grated Parmesan cheese
  • 2 to 4 tablespoons butter
