Homemade Chicken Lo Mein
  • 12  ounces  Chinese-style lo mein noodles,  cooked according to the package directions
  • subheading: Sauce:
  • 1  cup  chicken broth
  • ⅔  cup  soy sauce
  • 6  tablespoons  hoisin sauce
  • 6  tablespoons  oyster sauce
  • 5  tablespoons  cornstarch
  • 2  tablespoons  fresh garlic,  minced
  • 2  tablespoons  light brown sugar,  packed
  • 1  tablespoon  fresh ginger,  grated
  • ½  teaspoon  black pepper
  • subheading: Chicken and Vegetables:
  • 3  tablespoons  vegetable oil,  divided in half
  • 1½  pounds  boneless skinless chicken breasts,  cut into 1-inch cubes (4 cups)
  • 1  tablespoon  sesame oil
  • 1  small  white onion,  halved and sliced thin (1½ cups)
  • 2  cups  carrots,  cut into matchsticks or you can buy pre packaged
  • 1  red bell peppers,  seeded and thinly sliced
  • 3  cups  fresh broccoli florets
  • 1  cup  fresh sugar snap peas
  • 1  tablespoon  fresh garlic,  minced
  • 2  green onions,  sliced thin on the bias (optional garnish)
