Smoked Gouda and Broccoli Flatbreads
Ingredients
  • 8 ounces smoked Gouda, grated on the small holes of a box grater (about 2-½ cups)
  • 1 very large broccoli crown (florets and individual stems), coarsely chopped (about 4 cups)
  • 3 scallions (including some of the white parts), thinly sliced,
  • ½ tsp red pepper flakes
  • 2 tablespoons extra-virgin olive oil
  • Kosher salt and black pepper
  • 4 flatbread or pocketless pitas, roughly 8-inch diameter
