Chili, Vegetarian #2 Pressure Cooker 15 Bean Chili

  • 2 quarts water

  • 2 tablespoons vegetable oil
  • 1 large onion, diced
  • 1 jalapeño, minced
  • 3 cloves garlic, minced
  • ½ teaspoon Diamond Crystal kosher salt
  • ¼ cup chili powder
  • 2 tablespoons ground cumin
  • 1 tablespoon ground coriander
  • 1 teaspoon dried oregano (preferably Mexican oregano)
  • ¼ teaspoon cocoa powder (optional)
  • ⅛ teaspoon ground cloves (optional)
  • 1 teaspoon baking soda
  • 1 teaspoon Diamond Crystal kosher salt
  • 6 cups water
  • 1 (15 ounce) can fire roasted crushed tomatoes
  • 2 teaspoons brown sugar
  • 1 teaspoon fresh ground black pepper
  • Salt to taste (2 teaspoons more kosher salt?)
  • Lime wedges for serving
