Corn Cakes with Roasted Green Chile from Mj's Kitchen
Ingredients
  • 1 tbsp olive oil (for frying the corn cakes)

  • ¼ cup roasted green chile*, diced
  • 2 tbsp roasted red chile or sweet pepper*, diced
  • 1 tbsp fresh cilantro, minced (optional)
  • 1 cup corn, fresh, frozen, or canned, thawed/drained
  • 1 wedge lime (about ¼ tsp lime juice)
  • subheading: Batter ingredients:
  • ¼ cup whole wheat pastry flour*
  • 2 tbsp fine ground cornmeal
  • ¼ tsp salt
  • ¼ tsp Mexican oregano (or regular oregano)
  • ¼ tsp baking powder
  • ⅛ tsp garlic powder
  • 1 large egg, lightly beaten
  • ¼ cup milk or milk substitute

  • ½ cup sour cream
  • ½ cup avocado cream* (1 avocado 2 Tbsp sour cream)
  • ½ cup salsa or pica de gallo*
