  • 7 oz (200 g) diced bacon, (trimmed of fat)
  • 2 scallions or spring onions, (shallots) trimmed and finely sliced
  • 4 large eggs
  • ΒΌ cup shredded mozzarella cheese (or cheddar)
  • Cracked pepper to season
