  • ½ tablespoon oil, coconut, vegetable or olive oil
  • ½ cup finely chopped yellow or white onion
  • 2 cloves garlic, finely minced or ½ teaspoon garlic powder
  • 1 cup finely diced carrots
  • 1 cup diced broccoli florets
  • 1 cup frozen corn kernels
  • 2 cups cooked rice or quinoa
  • 3 to 4 cups cooked chicken (see note)
