Rancho Gordo White Bean Chili
Ingredients
  • 3 poblano chiles, roasted, peeled, deseeded, and diced
  • 12 tomatillos, husks removed
  • 2 tablespoons extra-virgin olive oil
  • 1 medium yellow onion, chopped
  • 3 garlic cloves, finely chopped
  • 3 to 5 serrano chiles, seeded and finely sliced
  • 2 teaspoons whole coriander seeds, toasted and ground, or 1 teaspoon ground
  • 2 tablespoons whole cumin seeds, toasted and ground, or 1 ½ tablespoons ground
  • 1 teaspoon cayenne pepper (optional)
  • 1 teaspoon Rancho Gordo Oregano Indio or Mexican Oregano
  • 1 bay leaf
  • Salt and freshly ground pepper
  • 1 to 2 cups chicken or vegetable broth
  • 3 cups cooked, shredded turkey or chicken
  • 3 cups cooked Rancho Gordo Ayocote Blanco, Caballero, Cassoulet, or other medium white bean
